Re-conceptualizing La Fiesta Hewitt into Cantina Texas
WACO, TX — OCTOBER 28, 2011 – Cantina Texas, Waco’s newest eatery from the La Fiesta Family of restaurants, is proud to announce its grand opening on Nov. 3, 2011, providing Central Texas with a new experience in Texas dining.
Sam Castillo, along with a culinary team led by Brian Keeth, produced all new menus for lunch and dinner, as well as a Saturday and Sunday brunch menu. All food will arrive fresh, with most ingredients grown right here in Texas. The Fort Worth Stockyards are a main provider of the meats and Homestead Heritage will supply an array of organic grains and cheeses.
“The restaurant will serve Texas comfort food with a twist,” said general manager Brian Keeth. “We hope to give guests a five-star dining experience with two-star prices.”
Cantina Texas will have a new and expanded bar as well as a renovated party room. Upon entering the restaurant, guests will discover a family-friendly yet fun atmosphere with bold, out-there colors on the interior. The outdoor patio has also been refurbished to allow for more guests.
In 1963 the Castillo family introduced Central Texans to Tex-Mex via La Fiesta Restaurant & Cantina located then and today on Franklin Avenue. The Castillo’s also made a bold cross-cultural move by introducing authentic Italian “pizza pie” to Waco. Nearly 50 years later, the Castillo’s again offer Central Texans something new.
Cantina Texas’ menu features such favorites as:
- Fancy-Pants Chicken and Dumplings : Slow roasted chicken with celery, carrots, peas, and onions in a creamy sauce with homemade jalapeño infused dumplings
- Tex-Mex Meatloaf : Chipotle-tomato glaze, rosemary mashed potatoes, and three mushroom gravy
- Texas Goat Cheese Enchilada : Rolled in blue corn tortilla topped with a red-chile tomato sauce, sour cream and cilantro, served with black beans and smokey veggies
